Recipe of the Week: No-Bake Chocolate Coconut Cookies

Sometimes it’s ok to be lazy. But you can be lazy and still make cookies without the extra hassle of baking. This recipe is a no-bake recipe that a colleague of mine shared with me a few months ago. These little bites turn out amazing and satisfy that sweet craving ever-so nicely.

Here’s what you need:

3 cups cooking oats
1 cup sweetened coconut shreds
2 cups white sugar (I only use 1 1/2 cups because the coconut is sweetened too)
1/2 cup unsweetened cocoa powder
1/2 cup milk
1/2 cup margarine

Here’s what you do:

In a saucepan, roast coconut until slightly golden brown. Let cool for a few minutes, then add oats and mix. In a separate saucepan bring sugar, cocoa powder, milk and margins to a boil. Pour mixture over oats and coconut mixtures and combine until all oats are evenly coated. Line a baking sheet with parchment paper. Place spoonfuls of mixture into parchment paper and cool in the refrigerator for at least 1 hour and then enjoy!

See! These are my lazy no-bake cookies and they’re husband approved! Try them out and let me know what your loved ones think.
