Tonight I’m surprising D with saag wala chicken aka spinach chicken curry. So, I thought I’d share the recipe with all of you.
Here’s what you’ll need:
1 lbs boneless chicken pieces
3 large bunches spinach
3 tbsp vegetable oil
2 large onions chopped
2 tbsp garlic paste
1 tbsp ginger paste
1 tsp coriander powder
1 tsp cumin powder
1 tbsp garam masala powder
2 medium tomatoes chopped
Here’s what you do:
Wash and chip the spinach and add it to a pot of water and boil until cooked. spinach and chop. Once cooked, grind the spinach into a paste in a food processor. Keep aside.
In another pan, heat the oil and fry the chicken pieces until browned. Remove from heat and keep aside.
In the same pan add the whole spices.
As the spices turn slightly darker, add the onion, ginger and garlic pastes and fry until onions are golden in color. Add the coriander, cumin and garam masala and fry for until the oil begins to separate from the masala. Add the chicken, mix well and add half a cup of water. Cook until the chicken is almost done. Add the spinach and mix. Cook until most of the water dries up. Remove from heat and enjoy with roti or rice.
Voila! You’ve just made spinach-chicken curry.
