Recipe of the Week: Baked Chicken Kabobs

Tired of eating the same old thing? Looking for a baked chicken recipe, that’s not only delicious but nutritional too? Then you have to try these oven-baked chicken kabobs!


2-4 chicken breasts (diced into cubes)
1/4 cup soya sauce (low-sodium)
1/3 cup vegetable oil
1-2 tbs garlic powder or 2-4 diced garlic cloves
1 tbs cayenne pepper
1 tbs chilly flakes
1 tbs ground black pepper
2-4 tbs lemon juice


Add all ingredients together into a bowl. Add diced chicken pieces into bowl and coat completely with marinate. Cover and chill in refrigerator for 3-5 hours. The longer you keep the chicken in the marinate the better the taste.

After 3-5 hours, remove chicken from refrigerator and slide onto wooden skewers with slices of onions and green and red peppers. Place kabobs on lined cookie sheet (I greased my cookie sheet due to lack if parchment paper). Place cookie sheet in to pre-heated (325 degrees) oven for 10-15 minutes turning at least once.

Once fully cooked, remove from oven and let cool for 60 seconds. Serve as appetizers or enjoy with your main course. I made a chickpea curry and served them with roti. D and my dad loved the sweet and savory taste! Sorry I forgot to take photos. But they turned out fantastic.
