Recipe of the Week: Betty Crocker Oatmeal Cookies Transformed

While at Walmart yesterday, I noticed a lot of the Betty Crocker cookie mixes were on sale, so I picked up a couple. The one I was anxious to make was the oatmeal one. Although, plain oatmeal cookies are delicious, I wanted to change them up a bit to make them a bit unique (well my-type of unique). I’m sure others have made similar cookies but for me this was a first time experiment.

The instructions on the package are quite straightforward and easy to make. They only require 1 egg, 1/2 cup butter; softened and 1-2 tablespoons of water. Bake for 10-12 minutes and voila, they’re done! However, I split the batch up into three equal parts to mix up with my own ingredients.

Part one was just the plain cookies as recommended on the packaging.

Part two, I added 1/2 cup raisins and 1 tablespoon of ground cinnamon.

Part three, I added 1/2 cup of sweetened coconut shreds.

The result was fantastic. Actually, all three batches were so good that I didn’t even get to take a photo of them before they were all gone.

For all of you that don’t like the premixed packages, here’s the original oatmeal cookie recipe. You can add either raisins and cinnamon or coconut to the mixture as you deem necessary. If you’d really like to shake things up, then add 2 teaspoons of cocoa powder to the coconut mix. That’ll hit spot for all you chocolate lovers.

Here’s what you need for the original oatmeal recipe:

1/2 cup softened butter or margarine
1 cup sugar
1 egg
1/2 tablespoon vanilla essence
1 teaspoon baking powder
1 cup all purpose flour
1 1/2 cups rolled oats

How to make them:
Preheat oven to 350 degrees. In a bowl, mix butter and sugar together until combined well. Add the egg and mix, then add vanilla and baking powder and mix until all ingredients combined. Sift flour in and mix. Then slowly add oatmeal and continue mixing. Once all combined, drop spoonfuls onto cookie sheet, lined with parchment paper. Bake until browned from the edges and/or roughly 9-10 minutes.
