Heartbroken Today

It’s New Year’s Eve. We should be bidding farewell to the previous year and celebrating the beginning of a new one. But today I am bidding farewell to an amazing person. A person I didn’t know personally but only professionally. A person I would love to call my friend. A beautiful girl who touched everyone’s heart she met. I wrote about her back in August, but just got this update about her now…

I am completely devastated and heartbroken today. I was recently told her fight with leukaemia took a turn for the worst and she was going to be taken off life support today. I don’t understand why these things happen to such good people. I don’t understand why it had to be her. She was such a kind person with a smile forever on her face and a zest for life. And even though leukaemia had cursed her, she never lost hope and was always positive about it. She wrote about her battle. I’d like you to visit her blog and read her story.

She’s such a brave and amazing person. I’m going to miss her dearly. I wish her family lots of love and strength through this difficult time. I wish a miracle could happen and heal her of all her pains and illnesses and she would wake up after the life support came off and was fully recovered. I wish I could give her a big hug and tell her how amazing she was. I wish she would email like she used to and bug me for reservation dates at work and then be ever so thankful for me “working my magic” as she always said.

I’ll miss you Trish. And although we weren’t the closest of friends, I want you to know that you were one of the best people I have ever worked with. Lots of love and prayers your way. I lit a candle for you today and will keep it burning with the hope that you miraculously recover. God bless and lots of love.

No New Year’s Resolutions For Me

Every year I write about my New Years resolutions and every year I don’t fulfill them. For 2015, my only resolution is to not set any resolutions for this year.

Of course there are goals I want to accomplish. But laying them out has never made me successful in achieving them. So what’s the point? This year I am just going to be focus on being happy and healthy and keeping my family happy, healthy and safe.

But I wish all of you success with your resolutions. Happy New Year’s Eve! Stay safe and enjoy the bubbly and celebrations!

What A Wonderful Christmas Day

I celebrated with my family and close friends. It was such a perfect day. Hectic, yes. But I would do it all over again if I could and not change a single thing.

Mrs. Claus came early and filled the empty space under our tree last night with tons of little gifts for all our family and friends. Then we enjoyed a brunch with a close friend, they all napped while I began the big dinner preparations. Sadly I didn’t get a photo of all the food. But here are some photos of our day.

I hope your Christmas was as beautiful and memorable as ours was and you shared this auspicious day with loved ones as we did.

Spinach and Feta Stuffed Chicken

This is a new recipe for me. I’ve seen it on Pinterest and on other websites and am going to give this a try for Christmas dinner. I’m really hoping it turns out and my family and friends enjoy it.

Here’s what you need:

  • 8 chicken breasts (I’ve got 8 guests coming, so one for each guest)
  • 3 tablespoons minced garlic
  • 4-5 tablespoons olive oil
  • 1 ½ bag frozen spinach (thawed and squeezed of excess water)
  • 1 ½ cup feta cheese
  • 2 ½ cups seasoned bread crumbs
  • 1 cup melted margarine or butter
  • 1 tablespoon salt
  • 1 tablespoon black ground pepper

Here’s what you do:

  • Preheat oven to 350 degrees F
  • Clean chicken with lemon juice, wash with water and pat dry
  • Slice each breast down the middle
  • In a skillet, cook spinach, garlic, salt, pepper and olive oil, until well cooked.
  • Add feta cheese to the spinach mixture and cook until slightly melted.
  • Distribute spinach and cheese mixture in the middle of each chicken breast.
  • Roll each breast in bread crumbs.
  • Place in glass baking dish and pour melted butter/margarine over chicken breasts.
  • Cook for 35-40 minutes or until chicken is thoroughly cooked all the way through. I always leave mine in longer because I like that well-done taste and texture. Just don’t leave it in too long, or it’ll dry up. For an extra juicy chicken, cover with tinfoil for 10-15 minutes and then remove tinfoil to let chicken finish cooking.

Serve with rice, steamed veggies and scalloped potatoes to make a hearty meal.

Cheesy Garlic Pull Apart Bread

A new blog I recently stumbled across had this delicious cheesy garlic pull apart bread recipe on it. I’ve ached to try it out but decided to save it for Christmas dinner. A similar version of this recipe is also famous on Pinterest. I’ve made a couple of adjustments to the original recipe but main concept is the same. The link to the original recipe is here.
Here’s what you need:
  • 1 loaf Italian Bread
  • 1/2 cup melted margarine
  • 2 Tablespoons of minced garlic
  • 2 Cups of shredded marble (mozzarella/cheddar) cheese
  • 1 Teaspoon of salt
Here’s what you do:
  1. Preheat oven to 350 degrees F.
  2. In a bowl, combine margarine, garlic and salt and mix.
  3. Cut the bread in a crisscross pattern 3/4 way down.
  4. Pour the butter, garlic and salt mix over the bread trying to get it into the cuts.
  5. Sprinkle and stuff the shredded cheese into the cuts and push down ensuring to get cheese in all cuts.
  6. Wrap the loaf with tinfoil and place on baking sheet.
  7. Bake for 15 minutes with the tinfoil on. Then remove the foil and put back in the oven for another 5-10 minutes until cheese has melted completely through and browned on top.
  8. Remove from oven, let cool for a couple of minutes and then serve.

Let everyone pull pieces apart themselves and enjoy! 🙂
