Recipe of the Month: Feta-Alfredo Chicken Spring Pasta

IMG_5227Was that title long enough for you? I couldn’t figure out the best way to sum up the medley of flavours in this quick delicious recipe.

This is a quick meal and has everything you need to feel full and satisfied! The prep time takes about 20 minutes and cook time is 10 minutes. You can use an array of fresh or frozen vegetables and pre made Alfredo or Vodka sauce. I made this one with Alfredo because it’s what I had in my pantry.

Here’s what you need: 

  • Half chopped red bell peppers
  • Half stalk chopped green onions
  • A cup of chopped mushrooms
  • A cup of chopped broccoli
  • 1/2 cup of chopped purple cabbage
  • 1/2 cup feta cheese
  • 1/2 cup each of shredded mozzarella and cheddar cheese
  • 1 bottle Alfredo sauce
  • Chilli flakes
  • Salt to taste
  • 1 tsp. Paprika
  • 1 tbsp. olive oil
  • 3-4 cups pasta of choice

Here’s what you do:


Heat oil, add chopped veggies and sauté until soft. Stir in chicken and cook until tender. Add basil, parsley, salt and pepper and cook on medium heat.


Add Alfredo sauce and half cup water and let boil on medium heat until sauce thickens. Add shredded cheddar and mozerella cheese. Cover and let cook until cheese is completely melted.

FAdd feta cheese and let cook covered, mixing slowly. Remove from heat and let stand uncovered for 5-10 minutes.


Sprinkle with chilli flakes and serve with garlic bread and wine. 

And there you have it; a quick, easy and delicious recipe for those lazy days you can’t figure out what to eat. 

Recipe of the Week: Tuna Salad

Tuna salad is one of those things you can enjoy with many things; pasta, bread, on its own and even as a casserole. I’m going to share my tuna salad recipe with you and then you decide how you want to serve it.

Here’s what you need:
Two cans tuna
1 tbs Mayonnaise
1/2 cup chopped celery
1/2 cup chopped carrots
Salt to taste
Black Pepper

Here’s what you do:
Cook tuna in a skillet until slightly darker in color. Add mayonnaise, celery, carrots and salt and pepper. Cook for another few minutes, mixing continuously. Remove from heat and serve with bread as a sandwich.

If you want to get really creative, serve on soda crackers with a little slice of Swiss cheese as a snack. You can also boil some swirly pasta and serve as a tuna pasta salad.

Recipe of the Week: Spicy Shrimp with Fettuccine

This is a great and quick dinner recipe. It’s quick, colorful and has a lot of flavor. Shrimp with veggies and fettuccine! Yum!

Ingredients:

  • Green beans
  • 3 tbsp salted butter or margarine
  • 1/4 cup minced garlic
  • 2 tsp paprika
  • 1 tsp chilly flakes
  • 1 pound raw shrimp, either pre-cooked or peeled and deveined
  • red, yellow and orange pepper
  • soya sauce
  • salt and pepper to taste
  • fettuccine

Directions

  1. Bring 4-5 cups of water to a boil in a large pot. Add 1 tsp of salt and place fettuccine in pan. Strain when desired softness is achieved and place back in pot
  2. In another pan, bring 1-2 inches of water to a boil and place green beans, red, yellow and orange pepper in a steamer basket, cover and steam until crisp. Remove from pan and mix in with strained fettuccine
  3. Heat butter in a skillet and add garlic, paprika, chilly flakes and soy sauce and cook.
  4. Add shrimp and cook until pink, about 2-3 minutes per side
  5. Add shrimp mixture to fettuccine and veggie pot and mix together, cook on low heat for 2-3 minutes

There you go! Serve with red wine and you have a hearty dinner!
